Traditional sweet of Lesvos - (Avgokalamara)

INGREDIENTS
  • olive oil
  • cinnamon
  • Nuts, grinded

    Dough
  • 1 glass ouzo
  • 2 eggs
  • Pinch of salt
  • 1 spoon self raisig flour
  • Soft flour (as much as required for a soft dough)

    Syrup
  • 1 glass sugar
  • 1 glass honey
  • 2 glasses water
METHOD
Mix all the ingredients needed for the dough. Use as much flour as required to knead a soft dough. Roll out the dough and cut in long stripes of 5 cm wide.
Heat oil in a frying pan and fry the stripes as follows: With the left hand hold the one edge of a stripe. The other edge should be caught with a large fork. Place the fork into the heated oil and gradually roll the stripe around the fork in a way that the whole stripe is fried and its shape is like a rose. Fry all the stripes according to this procedure. When all the stripes have been fried prepare the syrup and try to make it thick.
To prepare the syrup mix all necessary ingredients and heat them in a saucepan until the syrup starts to thicken.
Place the stripes in pairs into the syrup, remove from syrup, strain and place them in a platter. Dredge cinnamon and nuts over the stripes and serve.
